I think Sundays are the best days of the week and one of the best bits is having the luxury of time to make a special breakfast. Today we are at the cottage - bliss! And the sun is shining on pretty Iburndale so what better than blueberry pancakes in the garden! I always use Nigella's recipe for American pancakes. Don't get me wrong, I love ordinary shrove Tuesday kind of pancakes, but the thick, fluffy texture of these little gems is wonderful and I had blueberries and homemade blueberry jam in the fridge so... All that was required in addition was some creamy creme fraiche.
I find it best to make the batter in advance, because a. You can be extra lazy the morning of eating and b. The batter goes thicker, sort of doughy and sort of stretchy and makes a much better pancake. I think the baking powder reacts with the wet stuff and makes air bubbles which help the spongy texture along.

our most fav thing is to share what we have affectionaly called a 'bonser breakfast' (bonza is aussie slang for great and our last name just happens to be bonser) our fav is circles and pancakes. circles are simply just circles cut into the bread with a scone cutter and buttered on both sides and fried off and lightly salted. the girls just gobble them up, meanwhile the pancakes cant be made fast enough! we love ours with real maple syrup, however the price is now close to $9 a bottle so not sure how much longer we can enjoy that luxury:( great blog thanks and happy weekend xxrosey

Yes that does look like a wonderful breakfast, it must be a mad Australian thing cutting circles out of things becasue we like to make pancakes in shapes, or cut them out. This of course only happens when we have no where to be in a hurry and are not super hungry...it takes too long. I made scotch pancakes for the first time the other week to eat with bilberry jam (well yes you know that don't you), and would be interested to compare American with Scotch for yumminess :o)
